Chocolate Pie

Ingredients:

2 oz (2 squares) baking chocolate

1/2 cup (1 stick) butter

1 cup sugar

1/8 cup flour

3 Tbsp corn starch

2 eggs

1 tsp vanilla

1/2 cup milk

one 9-inch, pre-baked pie shell (I use the frozen kind and follow the directions on the label to once-bake it.)

Preheat the oven to 325 degrees. Melt chocolate and butter in small (~1 qt) saucepan over low heat, stirring to mix well. Stir in sugar and flour and cornstarch. Add eggs and milk, beat until smooth. Stir in the vanilla.Pour mixture into 9-inch pie shell. Bake 25 minute (until done through and through. Serve cool, so you can top it with ice cream or whipped cream or other health food.
